INGREDIENTS:
1. Pork Belly - 10lbs
2. Cebu Lechon Mix -70 gm/pack
INSTRUCTIONS:
1. Pat and dry pork belly
2. Score/slice meat - to maximize flavour
3. Rub Cebu Lechon Mix generously
4. Roll and tie Meat - it creates rounded shape and helps even cooking. Keep in the fridge for few hours/ overnight to penetrate seasoning.
FOR SKIN: (apply just before cooking)
Baste skin only ones just before placing in the oven. Mix of soy sauce and oil (1:1) to give taste and nice colour of the pork skin.
5. Place in the oven with cut side up and broil low for 3-4hrs for 10 lbs meat.
6. Turn meat after 2 hrs and continue until fully cook.
7. Rest for few minutes. Cut and serve.
HELPFUL TIPS:
#1. Place foil on the very top of the oven rack. Our years of experience of making lechon, makes it moist, tender and crispy. Direct heat can burn, dry and can create bubbles on the pork skin.
#2. Cover each end of your rolled meat with foil to prevent from burning and helps keep the moisture. Then remove foil when you turn/flip the meat to have brown coloured meat.
#3. Limit opening your oven to maintain temperature and prevent the skin from getting saggy. I know it can be exciting for making your first homemade lechon.
